Mouthwatering apple cake roll, so good and easy to make you’ll want to make on repeat!

I surely made this 3 times in a row on my family request, ’cause it was disappearing so fast from the plate that made my head spin – faster than you say “apple”! 🙂

It’s so moist, so full of apple flavor, with cinnamon and some surprise walnuts sprinkled within…

Ohh! This apple cake roll has become my favorite apple dessert recipe an will probably stay that way for a long time.

It’s cheap, too! We have apples all year round so no excuse for you not to try it.

What’s needed?… A few pantry staples. Let’s see the what exactly.

Ingredients Needed

  • Apples (whatever you have)
  • Eggs
  • Flour (all purpose works fine)
  • Vegetable oil
  • Cinnamon, vanilla extract
  • Sugar
  • Walnuts (optional but highly recommended)
  • Powdered sugar (to decorate)

How To Make It

Step1. Prep the apples

Rinse and peel the apples. Grate them into a large enough bowl. Prep a lined baking tray near you. Squeeze the juice out of the apples in your hands (in several batches) and transfer them into the tray.

Level up the grated apples uniformly.

Sprinkle on top sugar and cinnamon. Add chopped walnuts (optional). Bake for 10 minutes at 350F (180C).

Next, make the batter.

Step 2. Make the batter

Separate the eggs. Beat the whites with a pinch of salt until soft picks are formed. Gradually add in sugar in 2-3 additions. Mix well until a strong meringue is formed.

Mix the yolks with oil and vanilla. Gradually add the to the whites mixing at low speed until it’s well incorporated.

Sift the flower with baking powder into the batter in several additions, using a rubber spatula or a hand whisk to slowly mix it in. Use gentle upside down moves.

Step 3. Bake

Take out the apples from the oven and spread the batter mixture over them. Level well the batter and return to the oven for 15-20 minutes more, until lightly golden.

Once removed from the oven, place another parchment paper on top and (with the help of another tray or cutting board) flip the sheet cake.

Remove the old paper and using the new paper roll it up onto itself into a log.

Let it cool at room temperature in the rolled-up shape (about 1 h).

Cut & Serve The Apple Cake Roll

When cooled, sprinkle with icing sugar and slice it. Arrange the apple cake roll slices onto a platter and serve.

It’s so moist and delicate, it actually melts in your mouth. Indulge!

Keeping & Preserving

Keep the apple roll cake in plastic wrap at room temperature for 1-2 days or fridge up to 3-4 days.

IF it lasts that long! 🙂  Preserve in the freezer for 1 month, well wrapped in foil.

Ingredients

For the apple filling

  • 7-8 apples
  • 5 tbsp sugar
  • 1-2 tbsp cinnamon (to taste)
  • 1 handful chopped walnuts (optional)

For the batter

  • 5 eggs
  • 6 tbsp sugar
  • 6 tbsp flour
  • 6 tbsp vegetable oil
  • pinch of salt
  • 1 tsp baking powder
  • 1 tbsp vanilla extract
  • icing sugar to decorate

Instructions

  • Rinse and peel the apples. Grate them and prepare a oven baking tray lined with parchment paper. Transfer the apples in batches after squeeze them with your hands to release the excess juice.
    Layer the apples evenly and sprinkle with sugar, cinnamon and walnuts. Bake at 350F (180C) for about 10 minutes.
  • Meantime, prep the batter. Separate the whites and mix them with a pinch of salt until fluffy. Add the sugar in 3 batches and continue mixing until a strong meringue is forming (4-5 minutes).
    Separately, mix the yolks with the oil and vanilla. Add them to the whites in several additions and mix 1-2 minutes to incorporate.
    Mix baking powder with flour and sift over the batter in several additions. Incorporate the flour with smooth, delicate movements with a hand whisk or a spatula.
    Take out the apple tray from the oven and spread over the batter mixture. Level well and continue baking 15-20 minutes until light brown.
  • Take out of the oven and place another parchment paper on top of it. Flip the sheet cake and remove the initial paper. Roll it up onto itself and finish wrapping it with the new paper. Let it cool about 1hour or so.
    Unwrap the roll cake and sprinkle with icing sugar. Slice and serve. Enjoy!
