Easy Bacon Potato Casserole
This bacon potato casserole can be enjoyed as a side dish or as stand alone dish alongside a seasonal salad.

It’s very easy and simple to make. Just put everything together and let the oven do the rest.

What You Need
- 1/2 lbs. bacon, cut in small pieces (or sausages, salami, ham, whatever you have at hand)
- 1 lbs. potatoes, cut in small cubes
- 1 onion & 1 red bell pepper finely sliced
- 2-3 tablespoons olive oil or cooking oil
- salt, pepper and paprika to taste
How To Make It
Take a large enough casserole or cooking pan and add in the cubed potatoes. Add slices of onion and red pepper.

Add the bacon. Season with salt, black pepper and paprika to taste.

Add the oil and toss everything together so potatoes get covered with that seasoning and all is blended well.
Heat the oven to 365 F and place the casserole in. Place a parchment paper on top to help cook faster. Let it bake for about 25-30 minutes.

Take out the paper and take out the casserole to give it a good stir. Taken it back to the the oven for another 5 or 10 minutes until it gets a nice golden color.

Serve & Enjoy
Turn off the oven and enjoy it as a side dish simple meal or a meal on its own – alongside a large seasonal salad.
Make just enough to enjoy at one meal. leftovers are not as good as the fresh made bake.
