Easy Sour Cherry Cake
This sour cherry cake is a delicious homemade summer dessert, easy to make and can be made with pretty much any summer fruits.
Sour cherries are very used in Romanian cuisine all summer long in cakes, pies, pastries, refreshing drinks, syrups, gems and even alcoholic drinks. See my sour cherry marble cake here.

Ingredients Needed
- Sour cherries (pitted and drained, fresh or frozen)
- Eggs, sugar
- Flour, baking powder
- Butter (melted and cooled)
- Lemon zest, vanilla extract
- Icing sugar to decorate

Steps To Make Sour Cherry Cake
1. Beat the whites
Separate the whites from the yolks. Beat the whites with a pinch of salt until strong peaks. Start adding sugar in batches. Mix until all sugar is incorporated and a strong meringue is formed.
2. Add the yolks and flavors
Beat the yolks wit a fork and add them to the whites. Mix slowly to incorporate. Add the lemon zest, vanilla extract and continue mixing until all is well incorporated. Add the melted butter and mix well.
3. Add flour
Mix the flour with the baking powder and start adding over the eggs in batches. Use a spatula or a hand whisk in stead of the mixer to combine the flour with gentle moves, folding the batter from the bottom up.
Line a baking tray with parchment paper and spread the batter evenly. Top with sour cherries and preheat the oven.
4. Bake
Bake the sour cherry cake at 350F (180C) for about 50-55 minutes or until a toothpick come out clean. Take it out and let the cake cool.
Sprinkle with icing powder and cut into squares. Transfer onto a platter and serve.
Serving & Preserving
Serve it with a cup of coffee, tea or glass of milk. Take it to potlucks, picnics, serve as single portion finger food dessert at parties and gatherings or anytime you entertain.
To preserve leftovers, cover with cling film and keep on the counter for 2-3 days (mine never resists that long! 🙂 )

- 9"x13" (22 x 34cm) baking pan

Ingredients
- 3,5 cups (700g) sour cherries, pitted and drained
- 6 eggs
- 1 pinch of salt
- 1 cup (250g) sugar
- 1/2 cup (100g) butter melted and cooled
- 2 cups (230-250g) cake flour
- lemon zest from 1 lemon
- 1 tbsp vanilla extract
- 1 tsp baking powder
- icing sugar to decorate
Instructions
- Separate the eggs. Beat the whites with a pinch of salt until fluffy. Start adding sugar in batches.Beat the yolks with a fork and add them to the whites. Mix together. Add the lemon zest, vanilla and melted butter.
- Mix the flour with baking powder and sift over the batter in batches. Incorporate the flour very slowly with a spatula or hand whisk to avoid losing too much air from the batter.Line the baking pan with parchment paper and transfer the batter. Add sour cherries on top and preheat oven to 350F (180C).
- Bake for about 50-55 minutes until golden brown and a toothpick comes out clean. Let it cool. Dust with icing sugar and cut into bars or squares.Serve with your favorite beverage or coffee.
